Gustavore: Toasty Sammies

Three more hot sandwiches to warm the soul.

I just love sandwiches, especially a composition with lots of interesting flavors. I love them even more if they’re heated in the oven or on the griddle, the many forms of which are usually referred to, as a culinary category, as “toasty sammies.” I’ve already shared my love of Cuban sandwiches, as well as a Roasted Shiitake, Onion and Tomato Sandwich and a toasted version of Tyler’s Roasted Vegetable Muffaleta. If you think that a burger without beef is a sorry substitute for the real thing, I submit three that might change your mind. No beef-avoidance alternatives, these stand on their own (well, together with their accompaniments) as what they are: brilliant compositions of flavor and texture with a heap of eye-catching presentation. Focus on one of the Top 100 Healthiest Foods.

A couple years ago, I got interested in seeking out foods that were tasty and good for you. I had long held that fat equals flavor (which is true, of course), but I wanted to slim a bit without resorting to bland diet fare and I needed a reduced calorie count that afforded good nutrition. One of the resources I came across was the “Top 100 Healthiest Foods.” To be sure, there are several different lists out there making this claim, but they mostly have a lot in common and almost all of them mention mango. Gustavore Picnic: Concert on the Square

Green Fest, Kentucky Derby, live music and a tasty spread.

Big night on the Square! May 7 featured the Green Fest, a Kentucky Derby Party at Mac McGee, Nathan Beaver, and the season’s first Concert on the Square. This would clearly require a picnic. In my opinion, the picnic spread needs to convey a sense of abundance and of course, it must be easily portable. Yet, with just two partakers, I need to balance the need for abundance with the desire to avoid outright gluttony. Special sandwiches! Wait. Paradoxically, if we had just sammies, it wouldn’t seem like much abundance. Yet, a sufficiently stuffed ciabatta roll would probably amount to several servings and therefore gluttony.
