SEOUL-FUL EXPERIENCE WITH A KOREAN SCHNITZEL

New year brings a new sandwich!

This time, our culinary journeys took us to a land of zesty and spicy flavors where pickling is a means of survival.The result is a sweet Kalbi BBQ sauce with crunchy, spicy kimchi cabbage overtop our signature chicken schnitzel.

There are many recipes for Kimchi and Kalbi. We chose to go with a classic Kimchi sauce, which seems to have more than enough character to make the sandwich lively. The contradicting sweet flavor comes from the wonderful Kalbi: traditionally, it is a marinade (but we thicken it to create a sauce).
